Improved road infrastructure and urbanization have moved much of the wholesale trade to land-based markets. Today, the river sees only a modest number of boats trading in the traditional way — most active in the early morning.

Cai Be Floating Market, Cooking Class & Village Discovery
Your English-speaking guide meets you at your hotel in central District 1. For hotels outside the pickup zone, meet at TNK Travel Office at 7:30 AM.

Cai Be once hosted one of the Mekong Delta's most active floating markets, where wholesale merchants traded fruits and goods entirely by boat. Urbanization and better road infrastructure have shifted much of that commerce ashore — but the river hasn't gone quiet. What you'll see today is something more intimate: local fishing boats heading out for the morning catch, families moving between islands by sampan, small vendors trading the way their parents and grandparents did, and the unhurried pace of a community that still lives by the water.

11:30 – 11:50 AM: Boat transfer to Tan Phong island
Back on the water for a short cruise to Tan Phong Island. The channels narrow here, canopied by water coconut palms. You'll pass stilted houses, small fishing nets strung between posts, and the kind of scenery that doesn't photograph quite as well as it feels to be in.
11:50 – 12:30 PM: Hands-On Vietnamese cooking class
Arrive at a local family home on Tan Phong Island for your authentic Vietnamese cooking class! This is NOT a commercial cooking school—you'll learn from real Vietnamese home cooks in their actual kitchens.
Start in the garden, picking herbs and vegetables: Vietnamese coriander, basil, lemongrass, whatever is in season. Your instructor — typically the family matriarch — walks you through 2–3 dishes with your guide translating. Expect fresh spring rolls (gỏi cuốn), a fried version (chả giò), and one or two Mekong specialties depending on the season. You'll learn the rice paper technique, how to build a dipping sauce properly, and why Vietnamese cooking uses so many fresh herbs rather than cooked ones.

Sampan ride (approx. 30 minutes): A local rower takes you through the narrow back canals of Tan Phong — waterways too small for any motorized boat. Coconut palms overhead, stilted houses on both sides, the occasional splash of a fish. It's quiet in a way that's hard to find.
Bicycle ride (15–20 minutes): Pedal easy, flat village paths through fruit orchards and past family homes. Wave to kids, nod to farmers, stop whenever something catches your eye. If cycling isn't for you, walk at your own pace instead — the paths are gentle and the village is small.
02:30 PM: Return to Ho Chi Minh City
